Cheese and Potato Croquettes

4 large potatoes, peeled and quartered
3/4 cup Swiss, Cheddar or blue cheese, grated
Flour
2 tablespoons butter

Place potatoes in saucepan of boiling water and cook until soft, about 25 minutes. Drain and mash potatoes and leave to cool. When cool, add cheese and mix. Roll mixture into patties and flour lightly.

At serving time, heat butter on aluminum foil on top of grill. Fry patties on foil until brown and crispy, about 3 to 5 minutes on each side.

Makes 12 to 16 patties.
