Celery root
Vinegar
Good mayonnaise
Mild onion
Salt and pepper
Buy not-too-gnarly, not-too-huge celery roots. Peel rather generously to cut away the tougher outer part. If there are cottony areas in the center, cut them away. Cube and cook until al dente in enough water so it won't boil away plus a little vinegar and salt. Drain well. Combine with mayonnaise, a little vinegar, onion, salt and pepper and let mellow in the refrigerator.
Warning: Tell everyone that it's not potato salad BEFORE they taste it.
