Sauté Oil

Light olive oil
Dark (toasted) sesame oil

To make this subtle and taste-enhancing oil, use a ratio of 15/16 light olive oil and 1/16 dark sesame oil.

To make a small amount use 5 tablespoons olive oil and 1 teaspoon sesame oil.

To make 1 cup, measure 1 cup olive oil, remove 1 tablespoon, and replace with 1 tablespoon sesame oil. Or simply add a dash of dark sesame oil to a bit of olive oil in a sauté pan.
