Baked Fruit Bruschetta

4 slices bread, day old or dried out in a low-heat oven
4 to 6 teaspoons butter, softened
8 to 10 teaspoons granulated sugar or to taste, divided use
16 peach slices

Preheat oven to 425 degrees F.

Spread each bread slice with 1 to 1 1/2 teaspoons softened butter. Sprinkle with 1 teaspoon of sugar. Top with 4 peach slices. Sprinkle with another teaspoon of sugar (more for a caramelized effect). Bake 20 to 25 minutes or until fruit softens, sugar caramelizes a little and bread is toasted around the edges.

If desired, place under broiler briefly to caramelize the top. Serve immediately.

Makes 4 servings.
