Marshmallow Coffee Cream

This recipe was written before microwaves. Sunset Cookbook 1949

8 ounces marshmallows (miniatures are easiest)
1/2 cup strong hot coffee
1 cup heavy cream
More whipped cream and chocolate shavings for topping

If using large marshmallows, cut in small pieces using scissors dipped in hot water. Put in upper part of double boiler*, and dissolve over hot water. Add hot coffee, stir, and let cool. Whip 1 cup heavy cream and fold into cooled mixture. Pile into sherbet glasses and let stand in the refrigerator for several hours.

Serve topped with whipped cream topped with shaved
chocolate.

Serves 6.
