Cornstarch Puddings

1/3 cup granulated sugar
1/4 cup cornstarch
1/8 teaspoon salt
2 3/4 cups milk
2 tablespoons margarine
1 teaspoon vanilla extract

In medium saucepan combine sugar, cornstarch and salt. Gradually stir in milk until smooth. Stirring constantly, bring to boil over medium heat and boil 1 minute. Remove from heat. Stir in margarine and vanilla. Pour into serving bowls. Cover; refrigerate.

Makes about 1 1/2 cups.

Butterscotch: Substitute 1/2 cup firmly packed brown sugar for the granulated sugar.

Chocolate: Increase sugar to 2/3 cup and add 3 tablespoons cocoa with cornstarch.

Microwave directions: In large microwavable bowl, combine sugar, cornstarch and salt. Gradually stir in milk until smooth. Microwave on high 5 minutes. Stir. Microwave 5 minutes longer, stirring twice, or until mixture boils. Boil 1 minute. Remove from microwave, continue as directed above.
