2 cups frozen hash brown frozen
potatoes with onion and peppers
3 tablespoons butter or margarine
6 eggs
1 cup diced fully cooked ham
2 tablespoons water dash black pepper
In a 10 inch skillet, cook hash browns in butter or margarine until browned, stirring occasionally
In medium mixing bowl, beat together the eggs, 2 tablespoons water and a dash of pepper. Stir in the ham. Pour over potato mixure in skillet
cook over medium-low heat for 9-10 minutes. As eggs set, run spatula around edge of skillet, lifting edge to allow uncooked portion to flow underneath. Continue cooking and liftinf egde until mixture is almost set ( surface will be moist).
cove skillet and remove from heat. Let stand for 3-4 minutes or until top is set. Cut into wedges. Serve immediately
Makes 4 servings.
