8 1/2 slices bacon
1/4 cup scallion, chopped
1 can hominy, drained
4 eggs, beaten
1 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon dry parsley
Fry bacon until crisp. Drain on paper towels.
Saute green onion and hominy.
Mix beaten eggs, salt, pepper and parsley together. Add eggs in with hominy and scramble. Add crumbled bacon and serve.
